- Grind all roasted ingredients adding little water into a fine paste
- In a pressure cooker add oil when oil is just warm add red chilli turmeric coriander powder garam masala powder salt saute few seconds
- Add masala paste sautey till oil comes out if masala is sticking to bottom add little water and cook again make sure oil seperates out nicely
- Now add brinjals if brinjals are too big cut them into 2 or 4 pieces and then add into masala
- Now saute the brinjals on high heat with masala for a minute or two then add a glass full of water close lid and pressure cook until 2 whistles
- If using vessel boil the preparation and simmer till brinjals are tender
- Open cooker once pressure is completely gone garnish with loads of coriander leaves serve with chapati phulka rice
