  1. Take Baby Brinjal (350g)
  2. Prepare Dry chilli(Byadgi variety)

  4. Get Roasted groundnut

Being a vegetarian, eggplants are my favorite on the Grill. And without doubt baby eggplants are the greatest. Last weekend I found cute little baby eggplants at the Indian grocery, they were the perfect size to make stuffed eggplants. I bought a few, of course.

Instructions to make Stuffed Baby Eggplant Curry:
  1. Soak the dry chillies in water for 8 hours.
  2. Roast the grated coconut till it turns brown. Roast sesame seeds and fenugreek seeds separately.
  3. Cut the baby eggplants criss cross keeping the stem intact. Keep in water.
  4. Grind the tomatoes, coconut, sesame seeds, fenugreek seeds, soaked chillies, coriander powder, cumin powder, curry leaves, kashmiri chilli powder, soaked poppy seeds and salt together into a fine paste. Mix coriander leaves.
  5. Stuff this inside the eggplants and set aside.
  6. Heat oil in a pan. Add cumin seeds.
  7. Add grated ginger, cabbage and hing. Roast for a while.
  8. Spread the baby eggplants on pan.
  9. Turn the eggplants every 3 mins and cook.
  10. Once the eggplants are cooked add tamarind juice and jaggery. Add enough water. Cook for a few mins.
  11. Offer Stuffed Baby Eggplant Curry to Lord Sri Krisna. Honour Krishna Prasadam.
