The name of this dish comes from the Gujarati word "undhu", which translates to upside down, since the dish is traditionally cooked upside down underground in earthen pots, termed "matlu". Instructions to make Surti Undhiyu:
  1. For the vegetables
  2. Combine all the beans, Papdi, valoor etc.mix well and keep aside for 1/2 hour.
  3. For the methi muthais
  4. Combine all the ingredients along with little water and mix well to.make a smooth mixture.
  5. Divide the dough into equal portions and shape them oval by rolling between your palms and fingers.
  6. Heat oil in a kadhai and deep fry muthais a few at a time on a medium flame till.they are golden brown in colour. Drain and keep aside.
  7. Keep 2 tbsp of the Masala aside for stuffing the bananas.Stuff the brinjals with a little masala, toss well and keep aside.Stuff the potatoes and keep aside.
  8. Heat oil in a broad cooker.Add the carrot seeds and saute on a medium flame for few seconds. Add hing and saute.Add the beans, masala vegetables. Add 1/2 cup water, salt turmeric powder, jeera dhania powder, sugar and mix gently.
  9. Pour this masala water over the vegetables and pressure cook for 2 whistles.
  10. Stuff each banana with the remaining masala and keep aside.
  11. Transfer the Undhiyu to a broad vessel and add the methi muthais and stuffed bananas.
  12. Cover and cook on a slow flame for 10 minutes stirring occasionally.
  13. Serve hot garnished with fresh Coriander leaves

To make this undhiyu restaurant style, deep fry all the veggies one by one except papadi, peas and stuffed veggies.
