The ingredients needed to make Potato - Brinjal Curry:
- Get medium sized potatoes (cut it into square)
- Make ready medium sized Brinjal (cut it into square)
- Get Pumpkin (cut it into square)
- Prepare oil
- Make ready Turmeric powder
- Prepare coriander powder
- Take Salt
- Prepare big sized Tomato
- Take Red chilli powder and Crushed garlic (mixed)
- Prepare Asafoetida
Heat oil in a kadhai and temper mustard seeds. Add curry leaves, cloves, cinnamon and cumin seeds. Saute a while and add chopped onions. Fry till it turns golden brown.
Steps to make Potato - Brinjal Curry:
- Take a pressure cooker pan. Add oil. Once oil is hot, add asfoitida.
- Keep chopped vegetables in the water. Keep tomato, garlic paste with red chilli powder separate.
- Add tomatoes and garlic paste in cooker. Cook it for some time. Add all masala and salt too. Once tomatoes are mushy add vegetables in that. Add a glass of water. Mix it well.
- Close the cooker and give 4-5 whistles. Let it cool. Open the pan and serve curry with Rice or Roti.
Add ginger-garlic paste and chopped tomatoes. Add potato, brinjal, cooked field beans and finely chopped spinach. Aloo Baingan is a popular North Indian dish of potatoes and eggplant cooked in a rich, spicy tomato gravy and served with different kinds of Indian bread (my favourite being parathas). This curry can have a dry or liquidy consistency and the taste can range from mild to very hot. I had aloo baingan only once and have been dreaming of making it ever since.
