Baingan bharta is a vegetarian side dish that is very popular in India, Pakistan, and Bangladesh due to its rich aroma and flavor.   2. Repeat the process with other baingan as well.Now cover the roasted baingan so that it cools down and becomes easy to handle.Remove the skin of the roasted baingan and mash it well.
  3. Now take a pan or kadhai.Heat 2 tbsp oil.Add chopped onion and cook for 2 mins.
  4. Now add the dry spices.red chilli powder,haldi powder,coriander powder,garam masala powder,hing.mix everything and cook for few seconds.
  5. Add chopped tomato,green chilli and ginger garlic paste.
  6. Sprinkle salt and cook till tomatoes becomes mushy or till oil seperates.
  7. Add the roasted and peeled baingan to the tarka.
  8. Cover and Cook for couple of minutes.srinkle some coriander leaves.
  9. Dish out and garnish with coriander leaves and some lime slices.Serve hot with paratha,roti,naan…
