For this Hyderabadi style brinjal masala and the Capsicum masala recipe (which I have shared earlier) has the same recipe method. Just a few changes I make for this brinjal masala gravy. Add grounded peanuts and mix it with masala, add one glass of water and mix it. Add salt to taste, mix it.

Steps to make Spicy Brinjal Masala:
  1. Soak tamarind in 2 tbsp water. Extract the pulp. Wash and chop the brinjal. Soak in water to avoid discoloration.
  2. Take coconut in a blender and grind to smooth paste. Then add onion and cumin seeds and grind them.
  3. Heat oil in a heavy bottomed pan add mustard seeds after it cracks add urad dal and chanadhal fry till golden.
  4. Add curry leaves, brinjal, turmeric powder.
  5. Add the other spices, sambar powder, salt and chilli powder. Mix well.
  6. Add the coconut paste, tamarind pulp and mix well. Cover and cook in low flame stirring inbetween without smashing the brinjal.

When brinjals are soft add remaining stuffing masala and add half cup of water.adjust salt. Saute now and then, till raw smell of stuffing goes and it becomes a thick gravy. Brinjal Masala is a very popular recipe. Smear the white part of brinjal pieces with mixed spices. Grind small onions, ginger, green chillies, and cumin seeds into a nice paste.
