  1. First wash the brinjals. Wipe them and Grease them with a little oil and roast then on slow flame on the gas
  2. Turn them in between to roast them properly on the whole. After brinjals roasted completely let them cool and then peel of the skin carefully
  3. Then mash the pulp of brinjals and keep them aside
  4. Now take a pan pour pure ghee in it. Put cumin seeds and splutter the seeds. Now add finely chopped onions and sauté them. After 3-4 minutes onions colour will change a bit then add ginger garlic chilli paste and sauté for some time. Then add tomato paste and mix well and cook for 2-3 minutes.
  5. Add dry masala to the mixture and cook again. At last add curd and stir continuously so that curd could not get curdled. Cook until oil comes out and now add mashed brinjals mix well and cook for 3-4 minutes covered or until again oil leaves the pan
  6. Garnish it with some fresh coriander leaves and serve hot with chapati, naan etc.
