- Get 1/2 tsp ponch phutan
- Take 2 pinch, turmeric powder
- Prepare Salt as required
- Get 1 tsp sugar (optional)
Roasted Eggplant recipe - Baingan bhurta. Enjoy this spicy Indian eggplant curry dish over rice or with Indian bread (or both). Mix in eggplant and jalapeno pepper, and season with salt. Pare eggplant and cut in thin slices.
Instructions to make Eggplant With Curd:
- Wash and chop eggplants as you like. Mix fried besan, turmeric, sugar with the curd.
- After some seconds add curry leaves. Fry till aroma come out. Add both the dals, fry till golden brown on low flame.
- Then fry the chopped eggplants, add salt, cook covered for 2 minutes. Next add grated coconut and fry on low flame, covered, till, the eggplants are cooked.
- Add the curd mixture, mix well with cooked eggplants.. Allow to boil. Keep the gravy as you like. Serve hot with boiled rice /roti. - Thanks
