  5. Cover with foil and bake at 350°F for 20 minutes. Take the foil off and bake for an additional 15 minutes or until cheese bubbles.

Lightly season eggplant slices all over with salt; place in a single layer on several layers of paper towels inside a rimmed baking sheet. Top with another layer of paper towels.
